Wine in China: You have multiple roles in your life, how do you view your current status?
Rajat Parr: Now I run between the restaurant and the winery, and at the same time, I am in charge of many other tasks. But no matter what identity I have, I am always in love with wine. Wine has changed me, and it occupies all aspects of my life. The life track of a human being is just like the evolution of a bottle of wine. According to this analogy， I think now I am in the Aging Period as a sommelier, moving towards maturity. I have a great desire to write a conclusive book on my experience as a sommelier. But as a winemaker, I am currently a bottle of young wine.
Wine in China: What has motivated you to become a winemaker? Will it change your identity as a sommelier?
Rajat Parr: I have been a sommelier for 15 years and I believe that I have excelled in this field. But being a winemaker is a big challenge to me, because it demands a wider range of capabilities. Besides, the joy from tasting wines and making wines is definitely different. I choose to become a winemaker because I love wines, and the experience of making wines is more interesting compared with tasting or writing. My identity as a sommelier will not change at least for 10 years to come. But when I get old, I might just be a winemaker.
Wine in China: Please make a brief introduction about Sandhi wines.
Rajat Parr: I am a super fan of Burgundy Pinot Noir and Chardonnay, but I love the land of California, so I want to derive inspiration from Burgundy wines and make some well-balanced Californian wines with a structure and body of Burgundy style, which can represent the style, taste and body that I like. In the end, I have chosen Santa Babara because the terroir has all the traits that I desired.
Wine in China: How did you come into collaborate with Roosevelt Private Cellar(Shanghai)? What’s your plan for the future in the Chinese market?
Rajat Parr: Mr. Chenjikun( Founder of Roosevelt Private Cellar ) has been an old friend of me for more than 10 years, and he is the only person that I know in China. In order to gain a foothold here, it happened all naturally that I chose to cooperate with him. Moreover, his cellar is fantastic. The wines in his cellar are all famous brands , including Lsirena, Au Sommet, Amuse Bush under the leadership of the former winemaker of Screaming Eagle，the representation of Californian Cabernet Sauvignon, Silver Oak, etc. This promotion is the first time that Sandhi come to reach Chinese consumers. I will observe the preferences and evaluations from different parts. Next, I will held more tasting events in other cities to introduce our wines to Chinese wine lovers.
